Vegetarian Ceviche


Vegetarian Ceviche for a crowd . . .

While traditionally one thinks of raw fish when speaking of Ceviche, the word ceviche itself is oft disputed as to meaning – but most explanations involve the ideas of cooking with a citrus or vinegar like marinade or pickling – so theoretically, most anything could be “cooked” ceviche style!1 peeled raw eggplant, 1 zucchini, 6 med. mushrooms, 1 bunch broccoli, 1 can of hearts of palm, 6 green onions, 1 large sweet onion, 1 large bell or 5-6 mini sweet peppers, jalapeno peppers to taste, 12-20 halved grape tomatoes, 1 slightly undercooked sweet potato, celery to taste. I used a food processor to dice most everything except the broccoli, tomatoes, sweet potato, and celery. Marinated with 1 cup fresh lemon juice, 1/2 cup lime juice with three minced garlic cloves. Let sit for at least 3 hours in fridge, then serve with fresh homemade bread or crackers, sliced avocado and feta cheese if desired.
