So for these, I have to send a shout-out to Elana’s Pantry for a great little scone recipe!
I would have made them just like she posted these, but I didn’t have any oranges in the house to zest at the time! My son suggested cinnamon to go with the chocolate, and these little babies were born.
2 cups blanched almond flour (I used Nuts.com blanched almond flour–really good stuff!)
3/4 tsp baking soda
1/2 cup to 1 cup mini chocolate chips (depending on how gooey with chocolate you want them–we used a full cup!)
1 teaspoon cinnamon
3 tablespoons agave syrup or honey
Combine almond flour, baking soda, chocolate chips and cinnamon. Beat egg and then mix egg/agave into flour mixture. I mix this up and knead with my hands to make sure it all gets incorporated nicely. Your dough should hold together pretty well at this point. Form it into a circle and pat down to 1/2″ or so. Then cut the circle like you would a pie into 8 slices. Put the slices onto a prepared cookie sheet and bake at 350 for 10-15 minutes. Serve and enjoy!
