Our Gluten Free Miracle Mix is a unique and versatile mix for use as a bread replacement. While warm, it has a light, soft smooth texture inside – even slightly gooey depending on the type of cheese used in the mix. When cooled, the texture is airy and light.
1.5 cups tapioca flour
1/2 cup potato starch
1/3 cup coconut flour
1 Tbsp baking powder
1.5 tsp salt
1/2 cup cheese
1/3 cup coconut oil
1/2 cup hot water
1/4 cup sour cream or yogurt
Mix all together (by hand, with mixer or blender – just get the lumps out). You may use virtually any type of cheese or double up on the sour cream or yogurt and omit cheese altogether. We’ve used this mix for dinner rolls, muffins, pizza crust, bread for dipping sauce, etc.
The greatest thing about it is that you can lightly grease a cookie sheet or pizza pan and spread it out and it generally doesn’t stick. We’ve cut out sandwich size squares from the pan and made lovely sandwiches with this mix – and I make hamburger buns with it by pouring into a tart pan. Once cooled, just slice ’em in half and they make the best GF buns we’ve tried!
Bake this recipe at 400 degrees for 12-18 minutes depending on size/type of bread you’re making.
